Preheat the oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.

In a large bowl, combine the flour, granulated sugar, brown sugar, cinnamon, nutmeg, baking powder, and salt.

In a separate bowl, beat the eggs, vegetable oil, and vanilla extract. Gradually add the dry ingredients to the wet ingredients and mix until well combined.

Fold in the chopped apples.

Pour the batter into the prepared cake pan and smooth the top.

Bake for 40-45 minutes or until a toothpick inserted into the center comes out clean.

Remove from the oven and let the cake cool in the pan for 10 minutes.
