Spekkoek is a traditional Indonesian cake that was influenced by Dutch cuisine during the colonial period. Its name translates to ‘pork belly cake’ in Dutch, but it does not actually contain pork.

  1. Preheat the oven to 180°C (350°F) and grease a 23cm (9-inch) round cake pan.
  2. In a large bowl, cream together the butter and sugar until light and fluffy.
  3. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
  4. In a separate bowl, whisk together the flour, cinnamon, cloves, nutmeg, and salt. Gradually add the dry ingredients to the butter mixture, alternating with the milk.
  5. Pour a thin layer of batter into the prepared cake pan and spread it evenly. Bake in the preheated oven for 10-12 minutes, or until the layer is set and lightly browned.
  6. Remove the cake pan from the oven and carefully pour another thin layer of batter on top. Repeat this process until all the batter is used, creating multiple layers.
  7. Bake the cake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  8. Allow the cake to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
  9. Once cooled, wrap the cake in plastic wrap and let it rest at room temperature for at least 1 hour before serving.
  10. Slice the spekkoek into thin layers and serve.
