Spaghetti Squash Pie
Spaghetti squash is a type of winter squash that, when cooked, forms long strands that resemble spaghetti noodles.

Preheat the oven to 375°F (190°C). Cut the spaghetti squash in half lengthwise and remove the seeds. Place the squash halves cut-side down on a baking sheet and roast for 40-45 minutes, or until the flesh is tender. Let it cool.

In a large skillet, heat olive oil over medium heat. Add the diced onion and minced garlic cloves. Sauté until the onion is translucent and the garlic is fragrant.

Add the spinach to the skillet and cook until wilted. Remove from heat.

In a large bowl, whisk together the eggs, milk, Parmesan cheese, salt, black pepper, and nutmeg.

Scrape the roasted spaghetti squash flesh into the bowl with the egg mixture. Add the sautéed spinach and onion mixture. Stir until well combined.

Pour the mixture into a greased pie dish and smooth the top.

Bake for 30-35 minutes, or until the pie is set and golden brown.

Let it rest for 10 minutes before serving.
