Ingredients
  • 2 cup Cauliflower florets
  • 1 cup Cornmeal
  • 1 cup Breadcrumbs
  • 1 cup Cheddar cheese, shredded
  • 1/2 cup Red bell pepper, diced
  • 1/4 cup Green onions, chopped
  • 1 Egg, beaten
  • 1/2 teaspoon Cumin powder
  • 1/2 teaspoon Chili powder
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black pepper
  • 2 tablespoon Olive oil
Instructions
  1. Preheat the oven to 375°F (190°C).
  2. Steam the cauliflower florets until tender, then mash them using a fork.
  3. In a large bowl, combine the mashed cauliflower, cornmeal, breadcrumbs, shredded cheddar cheese, diced red bell pepper, chopped green onions, beaten egg, cumin powder, chili powder, salt, and black pepper. Mix well.
  4. Shape the mixture into small patties and place them on a greased baking sheet.
  5. Brush the patties with olive oil and bake for 20-25 minutes or until golden brown.
  6. Remove from the oven and let them rest for 5 minutes before serving.
  7. Serve the Southwestern Baked Cauliflower Cakes as an appetizer or side dish.
