Gradually whisk in the chicken broth and milk. Bring to a simmer and cook until thickened.

Stir in the sautéed vegetables, frozen peas, thyme, salt, and black pepper.

Place one pie crust sheet over the filling and press the edges to seal. Cut slits in the crust to allow steam to escape.
