Moon Pies were created in 1917 and became popular in the Southern United States as a snack for coal miners.

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, cream together the butter and granulated sugar until light and fluffy.
  3. Add the egg and vanilla extract, and mix well.
  4. In a separate bowl, whisk together the all-purpose flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the butter mixture, alternating with the milk.
  6. Roll out the dough on a floured surface to about 1/4 inch thickness.
  7. Use a round cookie cutter to cut out circles from the dough.
  8. Place the circles on a baking sheet lined with parchment paper.
  9. Bake for 10-12 minutes, or until lightly golden.
  10. Remove from the oven and let cool completely.
  11. Spread marshmallow cream on the bottom side of half of the cookies.
  12. Top with the remaining cookies to make sandwiches.
  13. Let the moon pies rest for at least 1 hour.
  14. Dust with powdered sugar before serving.
