  1. In a bowl, mix the sliced peaches and sugar. Let it sit for 15 minutes.
  2. In a separate bowl, combine the flour and salt. Cut in the butter until the mixture resembles coarse crumbs.
  3. In a small bowl, whisk together the egg, milk, and vanilla extract. Add the egg mixture to the flour mixture and stir until a dough forms.
  4. Divide the dough into 6 equal portions and roll each portion into a circle.
  5. Place a spoonful of the peach mixture onto one half of each dough circle. Fold the other half over the filling and press the edges to seal.
