  1. In a large bowl, mix the flour, sugar, salt, and baking powder.
  2. Cut the butter into small pieces and add it to the flour mixture. Use your fingers or a pastry cutter to blend the butter into the flour until the mixture resembles coarse crumbs.
  3. Add the sour cream to the mixture and stir until the dough comes together.
  4. Divide the dough into two equal portions and shape each portion into a disk. Wrap the disks in plastic wrap and refrigerate for at least 30 minutes.
  5. Preheat the oven to 375°F (190°C).
  6. On a lightly floured surface, roll out one disk of dough to fit a pie dish. Transfer the rolled-out dough to the pie dish and press it gently into the bottom and sides.
  7. Fill the pie crust with your desired filling.
  8. Roll out the second disk of dough and place it on top of the filling.
  9. Trim any excess dough and crimp the edges to seal the pie.
  10. Bake for 25-30 minutes, or until the crust is golden brown.
  11. Allow the pastry to cool for a few minutes before serving.
