Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a medium bowl, whisk together the flour, baking powder, and salt.
  3. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla extract.
  4. Gradually mix in the dry ingredients, alternating with the sour cream. Begin and end with the dry ingredients.
  5. Divide the batter evenly between the prepared cake pans. Smooth the tops with a spatula.
  6. Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  7. While the cakes are baking, prepare the pecan brittle. In a small saucepan, melt the butter over medium heat. Stir in the brown sugar and heavy cream. Bring to a boil, then remove from heat and stir in the chopped pecans.
  8. Once the cakes are done, remove them from the oven and let them cool in the pans for 10 minutes. Transfer the cakes to a wire rack to cool completely.
  9. Place one cake layer on a serving plate. Spread a layer of pecan brittle on top. Place the second cake layer on top and spread another layer of pecan brittle. Use the remaining brittle to decorate the sides of the cake.
  10. Allow the cake to rest for at least 1 hour before serving. Enjoy!
