Preheat the oven to 375°F (190°C).

Roll out the pie crust and place it in a 9-inch pie dish.

In a large bowl, combine the sour cherries, sugar, cornstarch, lemon juice, and vanilla extract. Mix well.

Pour the cherry mixture into the pie crust.

Dot the top of the cherry mixture with butter.

Roll out the remaining pie crust and cut it into strips.

Create a lattice pattern on top of the pie by weaving the strips over and under each other.

In a small bowl, beat the egg with milk. Brush the egg wash over the lattice crust.

Bake the pie for 45-50 minutes, or until the crust is golden brown and the filling is bubbly.

Allow the pie to cool for at least 30 minutes before serving.
