  1. Preheat the oven to 180°C (350°F).
  2. In a mixing bowl, cream together the butter and granulated sugar until light and fluffy.
  3. Add the eggs one at a time, beating well after each addition.
  4. Gradually add the flour and mix until well combined.
  5. Spoon the batter into a greased mini cake pan, filling each cavity halfway.
  6. Bake for 15-18 minutes or until golden brown.
  7. Remove from the oven and let the cakes cool in the pan for 10 minutes.
  8. In the meantime, whip the heavy cream with vanilla extract until stiff peaks form.
  9. Carefully remove the cakes from the pan and let them cool completely on a wire rack.
  10. Once cooled, slice each cake in half horizontally.
  11. Pipe or spoon a dollop of whipped cream onto the bottom half of each cake.
  12. Place the top half of the cake on the cream and dust with powdered sugar.
  13. Serve and enjoy!
