  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, mix together cherries, sugar, cornstarch, lemon juice, and vanilla extract.
  3. Roll out one pie crust and place it in a pie dish.
  4. Pour the cherry mixture into the pie crust.
  5. Dot the top of the cherry mixture with butter.
  6. Roll out the second pie crust and place it on top of the cherry filling.
  7. Seal the edges of the pie crusts together and cut slits in the top crust to allow steam to escape.
  8. Bake for 45 minutes or until the crust is golden brown.
  9. Let the pie cool for at least 30 minutes before serving.
