  1. Preheat the oven to 150°C. Cream the butter and sugar together until light and fluffy. Beat in the eggs, one at a time. Fold in the flour and mixed dried fruit. Divide the mixture into two greased and lined 20cm cake tins. Bake for 1 hour or until a skewer inserted into the center comes out clean. Allow the cakes to cool completely. Spread apricot jam on one of the cakes and sandwich the two cakes together. Roll out the marzipan and place it on top of the cake. Use a fork to create a pattern on the marzipan. Place the cake under a hot grill until the marzipan is golden brown. Allow the cake to cool before serving.
