Instructions

  1. Preheat the oven to 350°F (175°C). Grease and line a 10x15-inch (25x38 cm) baking pan with parchment paper.
  2. In a medium bowl, whisk together the cake flour, baking powder, and salt. Set aside.
  3. In a large mixing bowl, beat the eggs and granulated sugar until pale and fluffy. Add the vanilla extract and mix well.
  4. Gradually add the dry ingredients to the egg mixture, alternating with the milk. Mix until just combined.
  5. In a small saucepan, melt the unsalted butter over low heat. Add a spoonful of the cake batter to the melted butter and mix well. Then, pour the butter mixture into the cake batter and fold gently until fully incorporated.
  6. Pour the batter into the prepared baking pan and spread it evenly. Bake for 10-12 minutes or until the cake is springy to the touch.
  7. While the cake is still warm, dust a clean kitchen towel with powdered sugar. Invert the cake onto the towel and carefully remove the parchment paper. Roll the cake tightly with the towel and let it cool completely.
  8. Once the cake has cooled, carefully unroll it and spread a layer of whipped cream evenly over the surface. Add fresh fruits on top of the whipped cream.
  9. Gently roll the cake back up, using the towel to help you. Place the roll cake on a serving platter and dust with powdered sugar.
  10. Slice and serve the silky, smooth roll cake.
