  2. Grate the courgette and squeeze out any excess moisture.
  3. Melt the dark chocolate and butter together in a heatproof bowl over simmering water.
  4. In a separate bowl, whisk together the sugar and eggs until light and fluffy.
  5. Gradually add the melted chocolate mixture to the egg mixture, stirring well.
  6. Sift in the flour, cocoa powder, baking powder, and salt. Fold in gently.
  7. Stir in the grated courgette.
  8. Pour the batter into the prepared cake tin and smooth the top.
  9. Bake for 40 minutes or until a skewer inserted into the center comes out clean.
  10. Allow the cake to cool in the tin for 10 minutes, then transfer to a wire rack to cool completely.
