  1. Boil the potatoes until tender, then peel and mash them.
  2. In a pan, sauté the onion until translucent.
  3. In a mixing bowl, combine the mashed potatoes, sautéed onion, cheddar cheese, sour cream, flour, egg, salt, and black pepper. Mix well.
  4. Divide the dough into small portions and roll each portion into a thin circle.
  5. Place a spoonful of the potato filling onto each dough circle, then fold the dough over and seal the edges.
  6. Boil the pierogies in salted water for a few minutes until they float to the surface.
  7. In a separate pan, heat butter and vegetable oil over medium heat. Fry the boiled pierogies until golden brown.
  8. Serve hot with sour cream or your favorite sauce.
