Ingredients
  • 2 cup All-purpose flour
  • 3 tablespoon Cocoa powder
  • 1 teaspoon Baking soda
  • 0.5 teaspoon Salt
  • 0.5 cup Unsalted butter
  • 1 cup Granulated sugar
  • 1 large Egg
  • 1 teaspoon Vanilla extract
  • 0.5 cup Buttermilk
  • 1 cup Marshmallow fluff
  • 1 cup Powdered sugar
  • 2 tablespoon Milk
Instructions
  1. Preheat the oven to 350°F (175°C). In a medium bowl, whisk together the flour, cocoa powder, baking soda, and salt. In a separate large bowl, cream together the butter and granulated sugar until light and fluffy. Beat in the egg and vanilla extract. Gradually add the dry ingredients to the wet ingredients, alternating with the buttermilk. Mix until just combined. Drop spoonfuls of the batter onto a baking sheet lined with parchment paper. Bake for 10-12 minutes or until the edges are set. Allow the cookies to cool completely. In a small bowl, mix together the marshmallow fluff, powdered sugar, and milk to make the filling. Spread the filling onto the flat side of one cookie and sandwich with another cookie. Repeat with the remaining cookies. Enjoy!
