Shepherds Pie Southwest Style

Shepherd’s Pie is traditionally made with lamb, but this Southwest style version uses ground beef for a delicious twist.

Preheat the oven to 375°F (190°C).

In a large skillet, cook the ground beef over medium heat until browned. Drain any excess fat.

Add the onion, garlic, and red bell pepper to the skillet. Cook until the vegetables are softened.

Stir in the corn, black beans, diced tomatoes, chili powder, cumin, salt, and black pepper. Cook for another 5 minutes.

Transfer the mixture to a baking dish.

Spread the mashed potatoes evenly over the top of the beef mixture.

Sprinkle the cheddar cheese on top.

Bake for 25-30 minutes, or until the cheese is melted and bubbly.

Let it rest for 10 minutes before serving.

Garnish with chopped green onions.
