Shepherd’s Pie

Preheat the oven to 375°F (190°C).

In a large skillet, cook the ground beef over medium heat until browned. Drain the excess fat.

Add the onion, carrot, garlic, thyme, salt, and black pepper to the skillet. Cook for 5 minutes or until the vegetables are softened.

Stir in the tomato paste, Worcestershire sauce, and beef stock. Simmer for 10 minutes.

Add the frozen peas to the skillet and cook for an additional 2 minutes.

Meanwhile, peel and cut the potatoes into chunks. In a large pot, cover the potatoes with water and bring to a boil. Cook for 15 minutes or until the potatoes are fork-tender.

Drain the potatoes and return them to the pot. Add the butter and milk. Mash until smooth. Season with salt and black pepper to taste.

Transfer the beef mixture to a baking dish. Top with the mashed potatoes, spreading them evenly over the surface.

Bake for 25-30 minutes or until the top is golden brown.

Let the Shepherd's Pie rest for 10 minutes before serving.
