Shepherdess Pie is a vegetarian version of the traditional Shepherd’s Pie, which is made with minced meat.

Preheat the oven to 200°C (400°F).

Peel and chop the potatoes, then boil them in salted water until tender. Drain and mash with butter and milk until smooth.

In a large pan, heat olive oil and sauté the onion, carrot, celery, and garlic until softened.

Add tomato paste, lentils, vegetable stock, thyme, rosemary, salt, and black pepper. Simmer for 15 minutes.

Stir in frozen peas and cook for an additional 5 minutes.

Transfer the lentil mixture to a baking dish and spread the mashed potatoes on top.

Bake for 25-30 minutes or until the top is golden brown.

Let it rest for 10 minutes before serving.
