Ingredients
  • 2 cup All-purpose flour
  • 2 teaspoon Baking powder
  • 1 teaspoon Ground cinnamon
  • 1 teaspoon Ground nutmeg
  • 0.5 teaspoon Salt
  • 1 cup Unsalted butter, softened
  • 1.5 cup Granulated sugar
  • 3 large Eggs
  • 1 teaspoon Vanilla extract
  • 0.5 cup Dark rum
  • 0.5 cup Milk
  • 2 cup Mixed dried fruits (raisins, currants, chopped dates, etc.)
  • 1 cup Chopped walnuts
Instructions
  1. Preheat the oven to 325°F (165°C) and grease a 9-inch round cake pan.
  2. In a bowl, whisk together the flour, baking powder, cinnamon, nutmeg, and salt.
  3. In a separate large bowl, cream together the butter and sugar until light and fluffy.
  4. Beat in the eggs, one at a time, followed by the vanilla extract.
  5. Gradually add the dry ingredients to the wet ingredients, alternating with the rum and milk.
  6. Fold in the mixed dried fruits and chopped walnuts.
  7. Pour the batter into the prepared cake pan and smooth the top.
  8. Bake for 1 hour and 30 minutes, or until a toothpick inserted into the center comes out clean.
  9. Remove from the oven and let the cake cool in the pan for 10 minutes.
  10. Transfer the cake to a wire rack and let it cool completely.
  11. Once cooled, wrap the cake in plastic wrap and let it rest at room temperature for at least 1 hour before serving.
