Preheat the oven to 375°F (190°C).

In a large bowl, combine the cherries, lemon juice, granulated sugar, cornstarch, lemon zest, vanilla extract, and salt. Mix well.

Roll out the pie crust and place it in a 9-inch pie dish.

Pour the cherry mixture into the pie crust.

Dot the top of the filling with cubes of cold butter.

Roll out the second pie crust and place it on top of the filling. Seal the edges and make a few slits on the top crust for venting.

Brush the top crust with beaten egg.

Bake for 40-45 minutes, or until the crust is golden brown.

Remove from the oven and let it cool for at least 1 hour.

Dust with powdered sugar before serving.
