  1. Preheat the oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
  2. In a medium bowl, mix together carob powder, flour, baking powder, and salt.
  3. In a large bowl, whisk together coconut sugar, applesauce, almond milk, vanilla extract, and vegetable oil until well combined.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. Fold in the chopped walnuts.
  6. Pour the batter into the prepared cake pan and smooth the top.
  7. Bake for 35-40 minutes, or until a toothpick inserted into the center comes out clean.
  8. Remove from the oven and let the cake cool in the pan for 10 minutes.
  9. Transfer the cake to a wire rack and let it cool completely.
  10. Once cooled, dust the top with powdered sugar.
  11. Slice and serve.
