  1. Preheat the oven to 180°C (350°F).
  2. Peel and grate the potatoes, then squeeze out any excess moisture.
  3. In a large bowl, mix the grated potatoes with salt and black pepper.
  4. Heat 1 tablespoon of olive oil in a non-stick skillet over medium heat.
  5. Form the potato mixture into patties and cook until golden brown on both sides.
  6. Transfer the potato cakes to a baking sheet and bake in the preheated oven for 15 minutes.
  7. Season the salmon fillets with salt and black pepper.
  8. Heat 2 tablespoons of olive oil in a skillet over high heat.
  9. Sear the salmon fillets for 3-4 minutes on each side, until golden brown and cooked through.
  10. In the same skillet, melt the butter and sauté the garlic until fragrant.
  11. Add the spinach and cook until wilted.
  12. In a small bowl, whisk together the Dijon mustard and 1 tablespoon of olive oil.
  13. Serve the seared salmon on top of the potato cakes, with wilted spinach on the side. Drizzle the Dijon sauce over the salmon.
