Ingredients
  • 2 cup Corn kernels
  • 2 cup All-purpose flour
  • 1 medium Potato
  • 1 cup Cheddar cheese
  • 1 small Onion
  • 2 tablespoon Butter
  • 1 teaspoon Salt
  • 1 teaspoon Pepper
  • 1 cup Water
Instructions
  1. In a large mixing bowl, combine the corn kernels, all-purpose flour, grated potato, grated cheddar cheese, finely chopped onion, melted butter, salt, and pepper. Mix well until a dough forms.
  2. Divide the dough into small portions and roll each portion into a circle.
  3. Place a spoonful of the corn and cheese filling in the center of each dough circle.
  4. Fold the dough over the filling and seal the edges by pressing with a fork.
  5. Bring a large pot of salted water to a boil. Cook the pierogi in batches for about 3-4 minutes, or until they float to the surface.
  6. Remove the cooked pierogi from the water and drain.
  7. Heat a skillet over medium heat and melt some butter. Add the cooked pierogi and sear until golden brown on both sides.
  8. Serve the seared corn and cheese pierogi hot with sour cream or your favorite dipping sauce.
