  • 1.5 cup Pumpkin puree
  • 2 cup All-purpose flour
  • 2 teaspoon Baking powder
  • 1 teaspoon Baking soda
  • 2 teaspoon Cinnamon
  • 1 teaspoon Nutmeg
  • 0.5 teaspoon Salt
  • 0.5 cup Unsalted butter
  • 1 cup Granulated sugar
  • 0.5 cup Brown sugar
  • 2 large Eggs
  • 1 teaspoon Vanilla extract
  • 0.5 cup Apple cider
  • 0.5 cup Heavy cream
  • 1 cup Powdered sugar
  • 0.5 cup Caramel sauce
Instructions
  1. Preheat the oven to 350°F (175°C) and grease a 9-inch round cake pan.
  2. In a medium bowl, whisk together the pumpkin puree, flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  3. In a separate large bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
  4. Gradually add the dry ingredients to the wet ingredients, alternating with the apple cider. Mix until just combined.
  5. Pour the batter into the prepared cake pan and smooth the top. Bake for 35-40 minutes or until a toothpick inserted into the center comes out clean.
  6. Remove the cake from the oven and let it cool in the pan for 10 minutes. Then transfer it to a wire rack to cool completely.
  7. In a small saucepan, heat the heavy cream over medium heat until it starts to simmer. Remove from heat and whisk in the powdered sugar until smooth.
  8. Drizzle the caramel sauce over the cooled cake and then pour the apple cider caramel sauce over the top. Serve and enjoy!
