Scandinavian Rhubarb Cake
Rhubarb is often referred to as the ‘pie plant’ because it is commonly used in pies and desserts.

Preheat the oven to 180°C (350°F). Grease and flour a cake pan.

Wash the rhubarb stalks and cut them into small pieces.

In a mixing bowl, cream together the butter and sugar until light and fluffy.

Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.

In a separate bowl, whisk together the flour, baking powder, and salt.

Gradually add the dry ingredients to the butter mixture, alternating with the milk. Mix until just combined.

Gently fold in the rhubarb pieces.

Pour the batter into the prepared cake pan and smooth the top.

Bake for 40-45 minutes, or until a toothpick inserted into the center comes out clean.

Remove the cake from the oven and let it cool in the pan for 10 minutes. Then transfer it to a wire rack to cool completely.
