Preheat the oven to 375°F (190°C). Wash and chop the Swiss chard leaves. In a large bowl, combine the flour, baking powder, salt, and black pepper. In a separate bowl, whisk the eggs, milk, and olive oil. Add the egg mixture to the flour mixture and stir until just combined. Fold in the Swiss chard, cheddar cheese, Parmesan cheese, and fresh parsley. Grease a muffin tin or line with paper liners. Divide the batter evenly among the muffin cups. Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean. Allow the muffins to cool for 5 minutes before removing from the tin. Enjoy!
