In a large bowl, combine the grated sweet potatoes, chopped onion, garlic cloves, scallions, fresh thyme, all-purpose flour, baking powder, salt, and black pepper. Mix well. Heat vegetable oil in a frying pan over medium heat. Take a spoonful of the sweet potato mixture and shape it into a patty. Place it in the frying pan and flatten it slightly. Repeat with the remaining mixture. Cook the sweet potato cakes for about 3-4 minutes on each side, or until golden brown and crispy. Remove the cooked cakes from the pan and place them on a paper towel to drain excess oil. Let the cakes rest for 5 minutes before serving.
