Ingredients
  • 1.5 cup Pie crust
  • 2 cup Saskatoon berries
  • 2 cup Rhubarb
  • 1 cup Granulated sugar
  • 2 tablespoon Cornstarch
  • 1 tablespoon Lemon juice
  • 1 teaspoon Cinnamon
  • 1 teaspoon Vanilla extract
  • 1 beaten Egg
Instructions
  1. Preheat the oven to 375°F (190°C).
  2. Roll out the pie crust and place it in a 9-inch pie dish.
  3. In a mixing bowl, combine the Saskatoon berries, rhubarb, granulated sugar, cornstarch, lemon juice, cinnamon, and vanilla extract. Mix well.
  4. Pour the mixture into the pie crust.
  5. Place the second pie crust on top and seal the edges. Cut slits in the top crust to allow steam to escape.
  6. Brush the beaten egg over the top crust.
  7. Bake in the preheated oven for 45 minutes, or until the crust is golden brown and the filling is bubbly.
  8. Remove from the oven and let it rest for 30 minutes before serving.
  9. Serve warm or at room temperature.
