Saskatoon berries are native to Canada and are often referred to as the Canadian blueberry. They have a sweet and nutty flavor, making them perfect for pies and desserts.

  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, combine the Saskatoon berries, granulated sugar, all-purpose flour, lemon juice, and vanilla extract. Mix well.
  3. Roll out one pie crust and place it in a 9-inch pie dish.
  4. Pour the Saskatoon berry mixture into the pie crust.
  5. Dot the top of the filling with butter.
  6. Roll out the second pie crust and place it on top of the filling.
  7. Trim and crimp the edges of the crust.
  8. Brush the top crust with beaten egg and milk mixture.
  9. Cut slits in the top crust to allow steam to escape.
  10. Bake for 40-45 minutes, or until the crust is golden brown and the filling is bubbly.
  11. Remove from the oven and let it cool for at least 1 hour before serving.
