Ingredients
  • 2 cup All-purpose flour
  • 1 cup Granulated sugar
  • 1/2 cup Unsalted butter
  • 1/2 cup Cream cheese
  • 2 large Eggs
  • 1 teaspoon Vanilla extract
  • 1/2 teaspoon Baking powder
  • 1/4 teaspoon Salt
  • 1 cup Saskatoon berries
  • 1/4 cup Brown sugar
  • 1/2 teaspoon Ground cinnamon
  • 1/4 cup Chopped pecans
Instructions
  1. Preheat the oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
  2. In a large bowl, cream together the butter, cream cheese, and granulated sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla extract.
  3. In a separate bowl, combine the flour, baking powder, and salt. Gradually add the dry ingredients to the creamed mixture and mix well.
  4. Spread half of the batter into the prepared cake pan. Sprinkle the Saskatoon berries evenly over the batter. In a small bowl, mix together the brown sugar, cinnamon, and chopped pecans. Sprinkle half of this mixture over the berries.
  5. Carefully spread the remaining batter over the berry layer. Top with the remaining brown sugar mixture.
  6. Bake for 40 minutes, or until a toothpick inserted into the center comes out clean. Allow the cake to cool in the pan for 10 minutes, then remove from the pan and let it cool completely on a wire rack.
  7. Serve and enjoy!
