  1. Preheat the oven to 180°C (350°F).
  2. In a food processor, blend the pork shoulder, pork belly, bacon, onion, garlic, thyme, sage, nutmeg, salt, and black pepper until finely minced.
  3. In a separate bowl, mix the flour and lard until crumbly. Add the egg and water, then knead until a dough forms.
  4. Roll out two-thirds of the dough and line a greased pie dish.
  5. Spoon the pork mixture into the pie dish and press down firmly.
  6. Roll out the remaining dough and cover the pie, sealing the edges.
  7. Make a hole in the center of the pie to allow steam to escape.
  8. Bake in the preheated oven for 2 hours.
  9. Remove from the oven and let the pie rest for 30 minutes before serving.
