Preheat the oven to 180°C (350°F).

In a food processor, blend the pork shoulder, pork belly, bacon, onion, garlic, thyme, sage, nutmeg, salt, and black pepper until finely minced.

In a separate bowl, mix the flour and lard until crumbly. Add the egg and water, then knead until a dough forms.

Roll out two-thirds of the dough and line a greased pie dish.

Spoon the pork mixture into the pie dish and press down firmly.

Roll out the remaining dough and cover the pie, sealing the edges.

Make a hole in the center of the pie to allow steam to escape.

Bake in the preheated oven for 2 hours.

Remove from the oven and let the pie rest for 30 minutes before serving.
