  1. Preheat the oven to 375°F (190°C).
  2. Roll out the pie crust and place it in a 9-inch pie dish.
  3. In a large bowl, combine the sliced apples, pecans, brown sugar, granulated sugar, flour, lemon juice, vanilla extract, cinnamon, and salt. Mix well.
  4. Spoon the apple mixture into the pie crust and dot with butter.
  5. Roll out the remaining pie crust and cut into strips. Arrange the strips in a lattice pattern on top of the pie.
  6. In a small bowl, beat the egg. Brush the egg wash over the pie crust.
  7. Bake for 45-50 minutes, or until the crust is golden brown and the filling is bubbly.
  8. Allow the pie to cool for at least 30 minutes before serving.
