Ingredients
  • 400 gram Salmon fillets
  • 300 gram Roasted sweet potatoes
  • 100 gram Breadcrumbs
  • 1 unit Egg
  • 2 tablespoon Lime juice
  • 2 tablespoon Fresh dill
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 2 tablespoon Olive oil
Instructions
  1. Preheat the oven to 200°C (400°F).
  2. Place the salmon fillets on a baking sheet and season with salt and pepper. Bake for 10-12 minutes until cooked through.
  3. Meanwhile, peel and mash the roasted sweet potatoes in a large bowl.
  4. In a separate bowl, flake the cooked salmon into small pieces.
  5. Add the flaked salmon, breadcrumbs, egg, lime juice, fresh dill, salt, and black pepper to the mashed sweet potatoes. Mix well to combine.
  6. Shape the mixture into small patties.
  7. Heat olive oil in a frying pan over medium heat. Fry the salmon fish cakes for 3-4 minutes on each side until golden brown.
  8. Serve the salmon fish cakes with a squeeze of lime juice and garnish with fresh dill. Enjoy!
