Ingredients
  • 12 ounce Salmon fillets
  • 1 cup Potatoes
  • 1 cup Green onions
  • 1 teaspoon Dijon mustard
  • 2 tablespoon Lemon juice
  • 1 unit Egg
  • 1 cup Breadcrumbs
  • 1 teaspoon Dried dill
  • 1 teaspoon Salt
  • 1 teaspoon Pepper
  • 2 tablespoon Vegetable oil
Instructions
  1. Cook potatoes in boiling water until tender. Mash and let cool.
  2. In a large bowl, flake salmon into small pieces. Add mashed potatoes, green onions, Dijon mustard, lemon juice, egg, breadcrumbs, dried dill, salt, and pepper. Mix well.
  3. Shape mixture into 8 patties. Heat vegetable oil in a large skillet over medium heat. Cook salmon cakes until golden brown, about 4 minutes per side.
  4. Serve hot with tartar sauce or lemon wedges.
