  1. Preheat the oven to 180°C (350°F).
  2. Boil the potatoes until tender, then drain and mash them with butter and milk. Set aside.
  3. In a pan, heat olive oil and sauté the onion and garlic until softened.
  4. Add the spinach and cook until wilted. Remove from heat.
  5. In a separate bowl, beat the eggs and mix them with the cooked spinach, cheddar cheese, salt, and black pepper.
  6. Grease a pie dish and line the bottom with half of the mashed potatoes.
  7. Place the salmon fillets on top of the potatoes in the pie dish.
  8. Pour the spinach and cheese mixture over the salmon.
  9. Cover the filling with the remaining mashed potatoes.
  10. Bake in the preheated oven for 30-35 minutes, or until the top is golden brown.
  11. Allow the pie to rest for 10 minutes before serving.
  12. Serve hot and enjoy!
