  1. Preheat the oven to 350°F (175°C).
  2. Roll out the pie crust dough and cut it into small circles using a cookie cutter.
  3. Place half of the dough circles on a baking sheet lined with parchment paper.
  4. Spoon a small amount of fruit preserves onto each dough circle.
  5. Place the remaining dough circles on top of the preserves and press the edges together to seal.
  6. In a small bowl, whisk together the egg and water to make an egg wash.
  7. Brush the egg wash over the top of each cookie.
  8. Bake in the preheated oven for 12-15 minutes, or until golden brown.
  9. Allow the cookies to cool completely.
  10. Sprinkle powdered sugar over the cookies before serving.
