  1. Preheat the oven to 375°F (190°C).
  2. Roll out one pie crust and place it in a 9-inch pie dish.
  3. In a large bowl, combine the cherries, sugar, cornstarch, lemon juice, and vanilla extract. Mix well.
  4. Pour the cherry mixture into the pie crust.
  5. Dot the top of the cherry filling with small pieces of butter.
  6. Roll out the second pie crust and place it over the cherry filling. Trim and crimp the edges.
  7. Cut slits in the top crust to allow steam to escape.
  8. Bake for 45-50 minutes, or until the crust is golden brown and the filling is bubbly.
  9. Remove from the oven and let the pie cool for at least 1 hour before serving.
