Russian honey cake, also known as ‘Medovik’, is a traditional Russian dessert that dates back to the 19th century. It is believed to have been created by a French chef who worked for the Russian imperial family.

Preheat the oven to 180°C (350°F). Grease and flour 3 round cake pans.

In a saucepan, melt the butter and honey over low heat. Remove from heat and let cool.

In a large bowl, beat the sugar and eggs until light and fluffy. Gradually add the cooled honey mixture and mix well.

In a separate bowl, combine the flour and baking soda. Gradually add the dry ingredients to the honey mixture, alternating with sour cream, beginning and ending with the dry ingredients.

Divide the batter evenly among the prepared pans. Bake for 20-25 minutes or until a toothpick inserted into the center comes out clean.

Remove the cakes from the oven and let cool in the pans for 10 minutes. Transfer the cakes to a wire rack and let cool completely.

In a mixing bowl, whip the whipping cream, powdered sugar, and vanilla extract until stiff peaks form.

Place one cake layer on a serving plate and spread a layer of whipped cream on top. Repeat with the remaining cake layers and whipped cream.

Refrigerate the cake for at least 2 hours before serving.
