  1. Preheat the oven to 180°C (350°F) and line a baking tray with parchment paper.
  2. In a large bowl, combine the self-raising flour and butter. Rub the butter into the flour until the mixture resembles breadcrumbs.
  3. Stir in the caster sugar and mixed dried fruit.
  4. In a separate bowl, beat the egg with the milk and vanilla extract. Add this mixture to the dry ingredients and stir until just combined.
  5. Drop spoonfuls of the dough onto the prepared baking tray, leaving space between each rock cake.
  6. Bake in the preheated oven for 15-20 minutes, or until golden brown.
  7. Remove from the oven and allow to cool on a wire rack before serving.
