  • 500 gram Sweet Potatoes
  • 400 gram Cauliflower
  • 8 ounce Turkey Sausage
  • 2 cup Kale
  • 4 unit Eggs
  • 1 cup Milk
  • 1 cup Cheese
  • 2 clove Garlic
  • 2 tablespoon Olive Oil
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
Instructions
  1. Preheat the oven to 400°F (200°C).
  2. Peel and slice the sweet potatoes into thin rounds.
  3. In a large bowl, toss the sweet potato rounds with olive oil, salt, and black pepper.
  4. Arrange the sweet potato rounds in a pie dish to form the crust.
  5. Bake the sweet potato crust in the preheated oven for 15 minutes.
  6. Meanwhile, cook the turkey sausage in a skillet until browned.
  7. Add the cauliflower florets and minced garlic to the skillet with the sausage.
  8. Sauté until the cauliflower is tender.
  9. In a separate bowl, whisk together the eggs, milk, salt, and black pepper.
  10. Remove the sweet potato crust from the oven and layer the cooked sausage, cauliflower, and kale on top.
  11. Pour the egg mixture over the filling.
  12. Sprinkle cheese on top.
  13. Return the pie to the oven and bake for an additional 30 minutes, or until the eggs are set.
  14. Allow the pie to rest for 10 minutes before serving.
