  1. Preheat the oven to 425°F (220°C).
  2. In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  3. Cut the butter into small pieces and add it to the flour mixture. Use your fingers or a pastry cutter to cut the butter into the flour until the mixture resembles coarse crumbs.
  4. In a separate bowl, whisk together the cream, egg, and vanilla extract.
  5. Pour the cream mixture into the flour mixture and stir until just combined.
  6. If desired, fold in dried fruit.
  7. Turn the dough out onto a lightly floured surface and gently knead it a few times to bring it together.
  8. Pat the dough into a 1-inch thick circle.
  9. Use a round biscuit cutter to cut out scones from the dough. Place the scones onto a baking sheet lined with parchment paper.
  10. Bake for 12-15 minutes, or until the scones are golden brown.
  11. Remove from the oven and let the scones cool on a wire rack for 10 minutes before serving.
