  2. Cut the kabocha squash in half and remove the seeds. Place the halves face down on a baking sheet and bake for 40 minutes, or until the flesh is tender. Scoop out the flesh and mash it with a fork.
  3. In a medium bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  4. In a large bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla extract.
  5. Mix in the mashed kabocha squash and buttermilk. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Pour the batter into the prepared cake pan and smooth the top. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
