Ingredients
  • 1 cup Rice
  • 1 cup Quinoa
  • 1 cup Cornmeal
  • 1 cup Black beans
  • 1 cup Red bell pepper
  • 0.5 cup Green onions
  • 0.25 cup Cilantro
  • 2 tablespoon Lime juice
  • 1 teaspoon Garlic powder
  • 1 teaspoon Cumin
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoon Olive oil
Instructions
  1. Cook rice and quinoa according to package instructions. In a large bowl, combine cooked rice, cooked quinoa, cornmeal, black beans, red bell pepper, green onions, cilantro, lime juice, garlic powder, cumin, salt, and black pepper. Mix well. Shape the mixture into patties. Heat olive oil in a pan over medium heat. Fry the patties until golden brown on both sides. Serve the rice and quinoa corn cakes with black bean salsa on top. Enjoy!
