  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, combine rhubarb, strawberries, granulated sugar, cornstarch, and lemon juice. Mix well.
  3. Roll out one pie crust and place it in a 9-inch pie dish. Pour the rhubarb-strawberry mixture into the pie crust.
  4. Roll out the second pie crust and place it on top of the filling. Trim and crimp the edges to seal the pie.
  5. Brush the top crust with beaten egg and sprinkle with sugar.
  6. Make several slits on the top crust to allow steam to escape.
  7. Bake for 45 minutes, or until the crust is golden brown and the filling is bubbly.
  8. Remove from the oven and let it rest for 30 minutes before serving.
  9. Serve warm or at room temperature.
