Ingredients
  • 300 gram Rhubarb
  • 250 gram All-purpose flour
  • 100 gram Granulated sugar
  • 2 teaspoon Baking powder
  • 1/4 teaspoon Salt
  • 100 gram Unsalted butter
  • 1 unit Egg
  • 1/2 cup Milk
  • 1 teaspoon Vanilla extract
Instructions
  1. Preheat the oven to 180°C (350°F).
  2. In a mixing bowl, combine the flour, sugar, baking powder, and salt.
  3. Cut the butter into small pieces and add it to the dry ingredients. Use your fingers or a pastry cutter to rub the butter into the flour mixture until it resembles coarse crumbs.
  4. In a separate bowl, whisk together the egg, milk, and vanilla extract.
  5. Pour the wet ingredients into the dry ingredients and mix until just combined.
  6. Fold in the rhubarb.
  7. Transfer the batter into a greased baking dish.
  8. Bake for 35-40 minutes or until golden brown and a toothpick inserted into the center comes out clean.
