Ingredients
  • 4 cup Rhubarb stalks
  • 1 cup Granulated sugar
  • 2 tablespoon Cornstarch
  • 1 tablespoon Lemon juice
  • 1 teaspoon Vanilla extract
  • 1 crust Pie crust
  • 1 egg Egg wash
  • 1 tablespoon Turbinado sugar
Instructions
  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, combine rhubarb, sugar, cornstarch, lemon juice, and vanilla extract.
  3. Roll out the pie crust and line a pie dish with it.
  4. Pour the rhubarb mixture into the pie crust.
  5. Cover the pie with the remaining pie crust and seal the edges.
  6. Brush the top crust with egg wash and sprinkle with turbinado sugar.
  7. Bake for 45 minutes or until the crust is golden brown.
  8. Allow the pie to cool for at least 1 hour before serving.
