Preheat the oven to 375°F (190°C). In a large bowl, combine the flour, sugar, baking powder, and salt. In a separate bowl, whisk together the egg, milk, vegetable oil, and vanilla extract. Gradually add the wet ingredients to the dry ingredients, stirring until just combined. Gently fold in the chopped rhubarb. Spoon the batter into muffin cups, filling each about 2/3 full. Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean. Allow the muffins to cool for 10 minutes before removing them from the pan. Enjoy!
