  1. Preheat the oven to 180°C (350°F).
  2. Roll out the pie crust and line a pie dish with it.
  3. In a saucepan, combine the rhubarb, sugar, and cornstarch. Cook over medium heat until the rhubarb is tender and the mixture has thickened.
  4. Pour the rhubarb filling into the pie crust.
  5. In a mixing bowl, beat the egg whites and cream of tartar until soft peaks form. Gradually add the sugar and continue to beat until stiff peaks form.
  6. Spread the meringue over the rhubarb filling, making sure to seal the edges.
  7. Bake the pie for 15-20 minutes, or until the meringue is golden brown.
  8. Remove from the oven and let it cool for at least 2 hours before serving.
